Aperitif chez George et Crystal, summer in Lacoste

I had never seen an edible bamboo plant before, sure I'd tasted them in Chinese takeaway before but of course never questioned what they looked like when not covered in sweet and sour sauce. So it was a pleasure to discover that one of our favourite Lacostois, George, is growing them in his potager and that they are apparently way too easy to grow, by the looks of it there will be bamboo on the menu for the foreseeable future chez George and Crystal

George is as Provençal as they come so it was funny to see him in this Route 66 t-shirt

It is a delicate process of unravelling each layer and then trimming
